Dragon Lemon Protein Cake // Collab with Maysa
A perfect morning at the Coast with Maysa
Nothing better than a healthy dessert after the beach.
Let me introduce Maysa first…If I need to make it short, Maysa is an absolute beach babe! Ma is from Brazil, loves a trip, the ocean, sunsets and has that island lifestyle vibe that we love! She is also a health food lover and make it like a pro!
We prepared something really yummy, health and totally approved to be your favorite summer treat!
It can also taste even better after a morning spent at the beach! =)
We had a good plan in mind.
We meet up at around 8am to make the must delicious Dragon Lemon Protein Cake that you will ever have and while it was on the freeze to be on point we jumped to the beach to have some fun taking some photos and enjoy this beautiful day.
Kirra Beach
An absolutely clearly and peaceful morning.

Lemon cream:
1/3 cup coconut cream (tick part)
1 cup cashew nuts (boil 5 min & drain)
2 big lemon

Prep:
~ In a food processor mix oats and dates until sticky. Transfer to a 15cm square form or similar size, covered in parchment paper. Place in the fridge.
~ In a high speed blender, add banana, frozen dragon fruit and protein. (add lil bit of water if needed.
~ In a blender agin: add lemon juice and zest from the lemon plus all other cream ingredients (only use tick part from coconut milk can). Mix until completely smooth.
~ Now pour the dragon filling over the base oat and the lemon cream over the pink layer. Place the form in the freezer for at least 3hrs or until the cream has set. Decorate with more lemon zest, lemon slices and flowers. (the one that we used was from my neighbour, I don’t think he would mind…=)
Enjoy it!
